Descrizione Cantina: Agli inizi degli anni 80 la passione enologica di Salvatore Di Gaetano viene attratta da un luogo particolare, la contrada del Firriato, nell’agro straordinario della città di Trapani, un territorio agricolo segnato profondamente dalla coltivazione della vite e dalla cultura del vino, posto tra il mare, bellissimo, della costa trapanese e la rocca, maestosa, dell’antica città di Erice.E’nella cultura materiale contadina della Sicilia Occidentale che trae origine il nome FIRRIATO, ovvero quell’area prossima alla casa padronale, ben delimitata e protetta, dove venivano impiantate le colture più preziose, a partire dalla vigna. Firriato è il “girato” che, per una strana alchimia linguistica, riporta al “clos” delle tenute francesi.
Lavorazione Vino: Raccolta manuale delle uve 3 decade di Settembre, 1 decade di Ottobre.Vinificazione tradizionale con macerazione delle bucce, in serbatoi di acciaio inox. Affinamento in barrique di rovere Francese per circa 9 mesi.
