Vitigno: PINOT NERO
Descrizione Cantina: L'azienda Franz Haas, nasce a Bolzano nel 1880, è stata sempre gestita da sette generazioni appartenenti alla famiglia Haas. Franz Haas, non è solo una cantina, non è solo un marchio, Franz Hass è un uomo, una famiglia che da sette generazioni produce vino, mette nel vino la sua filosofia di vita, la continua ricerca della perfezione e ogni Haas ha il suo otcco e il suo stile. Franz Hass VI, a soli 17 anni dovette intentare un processo contro lo zio, che si era dimmostrato arrogante e avido, per salvaguardare l'eredità del padre. Per garantire la continuità della storia della famiglia costruì una cantina, che ancora oggi possiamo visitare, facendola passare per una stalla e per difenderla dalle mire dello zio. Grazie all'aiuto di un amico mediatore di vini, iniziò la sua avventura producendo, vinificando e vendendo il vino sfuso ai vari produttori. Oggi la cantina è composta da 55 ettari vitativi, sia di proprietà, in affitto e vigneti conferenti. Da sempre la cantina è conosciuta e rinomata per i suoi prodotti di punta che hanno come base il Pinot Nero. La cantina propone una vasta gamma di etichette, che comprende vini ottenuti da altre varietà di vitate del Sudtirol, interpretate tutte con eleganza e bevibilità. Situata ad una altezza tra 240 metri e 1150 s.l.m. , sono attualmente i più alti in Alto Adige. Coltivare a queste altitudini è più difficile e faticoso, ma i vini che nascono da queste terre si contraddistinguono per caratteristiche peculiari che li rendono unici. Più aromi e profumi, più struttura, più acidità e mineralità, è il caso del Pinot Nero "Ponkler", i cui vigneti si trovano ad una località ad 800 metri s.l.m. , vigneti completamente circondati da prati e da boschi, in un luogo frequentato da soli animali selvatici. I vigneti sembrano giardini impeccabili spesso l'erba alta tra i filari, così facendo si porta avanti il processo naturale dell'impollinazione, la riproduzione di fiori e insetti che altrimenti andrebbero ad estinguersi. Uve che in cantina sono lavorate seguendo la tradizione di un tempo e impiegando le più moderne tecnologie enologiche. Nascono così i vini come lo "Schwizer" o il "Manna". Alla continua ricerca della perfezione e di valorizzare i propri vini, Franz Haas decide di far impreziosire le proprie bottiglie con le etichette del genio creativo di Riccardo Schweizer, artista trentino. Le etichette le ritroviamo ancora oggi sui vini prodotti dalla cantina, dorate e colorate su sfondo nero, inconfondibili e riconoscibilissime sia su scaffali enoteca che sui tavoli del ristorante. Un'ulteriore dettaglio per farci scoprire che è una delle imprese vitivinicole più prestigiose della regione Alto Adige, si ha quando l'azienda decide di abbandonare il solito tappo di sughero per passare al tappo a vite. Scelta sicuramente non facile ne economica, che però evita spiacevoli contaminazioni e alterazioni del gusto e del profumo. Permette una sigillatura perfetta, una conservazione più lunga, consente di conservare le bottiglie in posizione verticale. Il tappo a vite è un oggetto complesso e di valore, permette la possibilità di diversificare la guarnizione interna, a seconda della tipologia del vino. Protegge il vino da alterazioni durante il trasporto, e la conservazione.
Lavorazione Vino: La vinificazione delle uve avviene in vasche aperte nelle quali il mosto in fermentazione entra in contatto con le bucce tramite frequenti rimontaggi e follature. Grazie a queste tecniche le sostanze coloranti e gli aromi contenuti nella buccia vengono estratti e passano al vino. A fine fermentazione il vino passa quindi dall'acciaio in barrique nelle quali avviene la fermentazione malolattica e successivamente la maturazione per un periodo di 12 mesi. In seguito all'imbottigliamento il vino affina per circa 1 anno in bottiglia.
